Mutton curry recipe Ingredients

  • 1 kg fresh Mutton / Lamb bone-in, cut into medium-sized pieces
  • 1 kg yogurt
  • 1 teaspoon Turmeric
  • 1 tablespoon Salt divided
  • 4 tablespoons Mustard Oil
  • 1 teaspoon Fennel Seeds
  • 1 Bayleaf
  • 1-inch Cinnamon Stick
  • 3-4 Cardamom Pods
  • 3-4 Cloves
  • 4 Green chillies (cut it lengthwise)
  • 3 large Onions finely chopped
  • 1 tablespoon Ginger Garlic Paste
  • 5 large Tomatoes finely chopped or pureed
  • 1 tablespoon Coriander Powder
  • 4 tablespoons Meat Masala different from curry powder
  • 2 Potatoes quartered (optional)
  • ½ teaspoon Garam masala
  • 1 tablespoon Kasuri methi optional but highly recommended
  • 1 inch piece Ginger( in stripes)
  • 1 tablespoon Ghee or Butter

Mutton curry recipe instruction

  • Marinate mutton Add mutton in a large mixing bowl & marinate it with yogurt, turmeric, salt, chili powder, and garam masala. Set aside for 1 hour.
  • Finely chop onions, green chili, ginger in stripes.
  • Heat oil in a pressure cooker and sauté fennel seeds, bay leaf, cinnamon, cardamom, cloves all chopped vegetables for 10 minutes & stir occasionally
  • Add tomatoes, coriander powder, meat masala, and the remaining salt and cook for 5 minutes till the tomatoes break down slightly.
  • In the pressure cooker: Add mutton, potatoes, and two cups of water and put the lid on. If using a stovetop pressure cooker, cook on high pressure for 20-25 minutes (5-6 whistles).
  • If using handi: If using handi, cook for 20 minutes on high pressure and let the pressure release naturally or manually release the pressure after 15 minutes.
  • Once the pressure is released, open the lid and switch on the flame again. Add more water if the gravy is too thick. Stir in garam masala, kasuri methi (if using), remaining green chilies, striped ginger, and ghee, and simmer for another 3-4 minutes.
  • Check and adjust seasoning. Let the curry rest for 15 minutes before serving.
