First, let’s talk about the Ingredients required to make this recipe
INGREDIENTS
- 1 pound boneless, skinless chicken breasts or thighs, thinly sliced
Wooden skewers (soaked in water for 30 minutes to prevent burning)
For the Marinade:
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons brown sugar
1 tablespoon curry powder
1 teaspoon turmeric powder
1 teaspoon ground cumin
2 cloves garlic, minced
1 tablespoon lemongrass, finely chopped (or lemongrass paste)
2 tablespoons vegetable oil
- For the Peanut Sauce:
1 cup creamy peanut butter
1/4 cup soy sauce
2 tablespoons brown sugar
1 teaspoon sesame oil
1 teaspoon chili paste (adjust to taste)
1/2 cup coconut milk
2 tablespoons lime juice
Water (to adjust consistency)
Instructions
- Prepare the Marinade
- In a bowl, combine all the marinade ingredients: soy sauce, fish sauce, brown sugar, curry powder, turmeric powder, ground cumin, minced garlic, lemongrass, and vegetable oil.
- Mix the ingredients thoroughly to create a well-blended marinade.
- Marinate the Chicken
- Place the sliced chicken in a shallow dish or zip-top bag.
- Pour the marinade over the chicken, ensuring each piece is coated. Allow the chicken to marinate for at least 1 hour in the refrigerator.
- Skewer the Chicken
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken slices onto the soaked wooden skewers, leaving a little space between each piece.
- Place the skewers on the preheated grill and cook for about 3-4 minutes on each side, or until the chicken is cooked through and has grill marks.
- Prepare the Peanut Sauce
- In a saucepan over low heat, combine peanut butter, soy sauce, brown sugar, sesame oil, and chili paste. Stir until well combined.
- Add Coconut Milk and Lime Juice
- Gradually add the coconut milk and lime juice to the sauce while stirring. If the sauce is too thick, you can add a little water to achieve the desired consistency.
- Serve and Enjoy
- Arrange the grilled chicken satay skewers on a platter.
- Serve them with the prepared peanut sauce on the side.
